I pull the remaining thread off the reel and throw it in the bin, then I toss the reel to one of my cats. He has the most wonderful time tossing it around and chasing it, and I have that satisfied feeling that you get when you finish a reel. If I start to feel guilty I have a look at all my spare reels with hundreds of metres on them altogether!
Oh goodness! I hope you kept it! :) I'm with Sally, use it for basting. Or take it off the spool and wrap it around a little cardboard for a little travel sewing kit. You can even take an old needle and run it through some emery and pre-thread it. It's a good way to use old needles for a quick mend. I use my old spools for leftover bias tape.

I'd use the left over thread the next time I need to baste something - being a vibrant colour will be easy to pick out later.

Wind it on a bobbin and use it up in the seam allowance of anything red/pink. I hate waste too, its so hard to decide when to just toss something.
I keep mine for mending. I always feel bad when I have to use my "good thread" just to sew a button back on a shirt.
